Hot Cross Buns

Easter holiday are around the corner. Join us as we make the most delicious Hot Cross Buns ever! Nothing beats homemade, you’ll have your family and friends wanting more and more.

Ingredients

  • 540 g strong white flour (t55)
  • 85 g soft butter
  • 55 g milk powder
  • 40 g fresh yeast
  • 85 g caster sugar 
  • 1 ea. egg – whole
  • 240 g tepid water
  • 4 g mixed spice
  • 5 g dried woodruff 
  • 80 g tea-soaked raisins
  • 50 g mixed peel
  • Dried wild seeds cinnamon to dust

Directions

  1. Add the water to a small pan and place over a low heat for a few minutes, or until slightly warm – you should be able to dip your finger in without scalding it. 
  2. Add the butter to a separate pan and place over a low heat for a few minutes, or until melted, then set aside.   
  3. Transfer the warmed water to a medium bowl and stir in the yeast.   
  4. Sift the flour into a large bowl, add sugar, milk powder, mixed spice.
  5. Transfer to a stand mixer and pour in the melted butter, followed by the yeast mixture and beaten egg.   
  6. Make a dough with the added ingredients on speed 5/6 minutes with the dough hook until soft and springy.   
  7. Add raisins, dried woodruff and mixed peel, mix for a further minute on low.   
  8. Allow to rest in the fridge overnight.
  9. Roll out and cut into squares and prove for 20 minutes. 
  10. Before cooking, pipe a cross on top of each bun with a thick paste bade from water and flour.
  11. Cook at 190°C for 7 minutes.   
  12. Glaze with some warm golden syrup and dust cinnamon and dried seeds straight out of the oven.
